Baked Salmon Filets

This is a simple but very delicious and satisfying entrée. “He” tells me, “This would be a five-star dish anywhere.”
Ingredients
- Salmon filet (cut into individual portions) as many as needed
- Olive oil
- Salmon rub
- Softened butter
- Chopped fresh basil
- Salt and pepper
Instructions
1. Lay out your salmon filets and pat them dry with a paper towel
2. Drizzle both sides of each filet with olive oil
3. Season both sides of each filet with salt and pepper to your taste
4. Sprinkle on the salmon rub and gently rub the seasonings into the fillets
5. Let the filets rest while you make the Basil Butter
6. Mix some softened butter and chopped basil together and spread or dollop onto each filet. For two servings I use approx. 1 tbsp butter and 1 tsp basil
7. Put filets on a foil or parchment paper lined sheet pan and bake in a 375°F oven or toaster oven for about 6-8 minutes. Actual time depends on the size and thickness of your filets.
You don’t want to overcook. This is something most people accidentally do. Dried out fish is not very tasty.
Serve it over rice pilaf or with a vegetable you like. Pan-roasted asparagus is an excellent side with salmon
Note: I haven’t stated an exact amount of seasoning because that really needs to be up to the cook. I tend to season generously, but others may prefer a little less. The salmon rub shown above is the one I use, and I think it’s what really makes this dish shine.
